Ingredients

  • 1 ½ - 2# center cut pork roast, butterflied
  • 2-3 Roma tomatoes
  • 1 jalapeno pepper
  • ½ sweet onion
  • 1 fresh pineapple, peeled and cored
  • 1 bunch fresh cilantro, use as much as you wish
  • And, my favorite, fajita seasoning

Preparation

Step 1

From your cupboard, select an oven-proof pan or casserole appropriate for the pork when spread open. Season all sides of the pork with the fajita seasoning.

Thinly slice the pineapple – enough to place under the pork, as well as atop it.

Coarsely chop the tomatoes, onion, jalapeno, and cilantro.

Lightly grease the pan or casserole with olive oil. Place in the pork on top of ½ of the pineapple slices. Top the pork with the remaining pineapple slices and place the chopped tomatoes, onion, alapeno, and cilantro around and on top of the pork and pineapple. Sprinkle with fajita seasoning.

Bake in a preheated oven, 375 °, for 40 minutes to an hour, depending on the size of the meat.

Allow to rest about 10 minutes before serving. Slice and serve with the vegetables and pan juices.
