Ingredients

  • grated Parmesan cheese
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp dry mustard
  • 4 egg yolks, room temperature
  • 5 egg whites, room temperature
  • 1 cup greated aged cheddar cheese

Step 1

Butter a 6 cup souffle dish and sprinkle lightly with Parmesan. In heavy saucepan over medium heat, melt butter. Whisk in flour; cook, stirring, until bubbling. Gradually whisk in milk; bring to a boil, whisking constantly, and cook until thick and smooth, about 2 minutes. Whisk in salt, mustard and pepper. Remove from heat and whisk in yolks, one at a time. Add grated cheese; stir until melted. Transfer mixture to a large bowl.

In a second bowl, beat egg whites until stiff but not dry. Stir about 1/4 of the whites into the cheese mixture to lighten it, then fold in remaining whites. Pour into prepared souffle dish; smooth the top. Run the handle of a spatula around the inside rim to give it the classic top-hat.

Bake in a preheated 375F oven for 30 to 35 minutes or until well risen and golden brown. Serve immediately.
