Ingredients
- 2 pounds Roma tomatoes, seeded and chopped into large chunks
- 2 cups diced cucumbers
- 1/2 cup finely chopped red onion
- 1 tablespoon chopped garlic
- 2 jalapenos, stemmed, seeded and chopped
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- Juice of 1 lime
- Coarse kosher salt
- 1/4 cup chopped fresh cilantro
- Tortilla or pita chips, for serving

Step 1
In a medium bowl, combine tomatoes, cucumbers, garlic and jalapenos.
In a small bowl, beat oil and vinegar until well emulsified. Add lime juice, salt to taste, and cilantro.
Pour the dressing over the tomato mixture and toss thoroughly. Chill for 30 minutes before serving.
Serve with tortilla or pita chips.
