Ingredients

  • Salad:
  • 1 (7 ounce) bag baby spinach greens
  • 1/2 cup fat-free salad croutons
  • Dressing:
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1/4 cup Dijon mustard
  • 3 tbsp Splenda, granular
  • 5 slices veggie bacon
  • 1/4 cup red onion, chopped
  • 2 garlic cloves, minced
  • Olive or other vegetable oil (for sauteeing)

Preparation

Step 1

Place spinach greens in a large mixing bowl. Remove any undesireable leaves or large stems. Add croutons. Set aside.

Blend vinegar, water, mustard and Splenda granular in a small mixing bowl. Set aside.

Nuke veggie bacon until crispy. Crumble.

Saute onion and garlic in a small amount of vegetable oil over medium-high heat, 1 to 2 minutes.

Add vinegar mixture and simmer 1 to 2 minutes. Pour over spinach and croutons. Toss well with veggie bacon. Serve immediately.
