  • 2 C. Sugar
  • 3 Eggs
  • 1 C. minus 2 Tbls Oil
  • 3 C. Flour
  • 1 Tsp Baking Soda
  • 3/4 Tsp Salt
  • 1/2 C. Chopped Nuts
  • 3/4 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 3 Tsp Vanilla
  • 1 - 13 1/2 oz Can Crushed Pinnapple - undrained
  • 2 C. Grated Carrots

Preparation

Step 1

Beat together sugar and etts. Beat in remaining ingredients in any order.

Turn into 2 greased and floured 9x5 Loaf Pans.

Bake at 325 degrees for 50-55 minutes, until loaf tests done (knife or toothpick comes out clean).
