Ingredients

  • 2 cups sugar
  • 2 1/2 cups white vinegar
  • 2 inch piece fresh ginger
  • 4 cloves garlic
  • 2 lbs mangoes, peeled and cut into fine pieces
  • 1/2 to 1 tbsp chili powder
  • 1 tdsp mustard seed
  • 2 tbsp salt
  • 2 cups golden raisins

Preparation

Step 1

Place sugar and all but 1 tbsp vinegar in a saucepan & simmer for 10 minutes. Blend ginger, garlic & remaining vinegar to a paste in food processor. Add to above and cook for 10 minutes stirring often.
Add mangoes and remaining ingredients & cook uncovered for 25 minutes stirring as chutney thickens. Remove from heat & allow to cool. Pour into sterilized jars.
