Ingredients
- 1 heaping cup dry noodles (or elbow macaroni)
- 1 can stewed tomatoes
- ½ cup grated cheddar cheese
- ¼ cup cooking oil
- ½ cup onion thinly sliced
- ½ cup thinly sliced celery
- ¼ cup chopped red or green pepper
- 1 lb. ground beef
- 2 T. soy sauce
- ½ tsp. chili powder
- 1 tsp. salt
- 1 tsp. sugar
- ¼ tsp. pepper
- Parmesan cheese

Step 1
Cook macaroni or noodles according to package directions. Drain. Put drained pasta back in pot and add tomatoes and grated cheese. Stir over low heat until cheese is melted.
Heat oil in heavy skillet; add onion, celery, and green pepper. Simmer over low heat until soft and lightly browned. Add meat and continue cooking until meat has browned.
Add seasonings to meat and add pasta and tomatoes. Stir to combine. Let simmer for 20 minutes before serving. Spinkle with Parmesan cheese if desired.
Always better the longer it sits and even better the next day.
