Ingredients
- 1 T. vegetable oil
- 2 T. butter
- 4 serving size pieces of salmon filets
- 1 shallot diced
- ½ lb of mushrooms sliced
- 3 T. Pernod
- ½ cup heavy cream
- 1 T. parsley
- salt and pepper

Step 1
Preheat oven to 200 degrees
Heat oil and butter in large frying pan. When melted, add fish and season well. Cover and cook 4 minutes over medium heat. Turn fish over and continue cooking 4 to 5 mins covered. Remove fish from the pan and keep hot in the oven. Add shallot and mushrooms to frying pan: Season well. Cover and cook for 3 to 4 minutes. Pour in Pernod and bring to a boil; continue cooking for 2 minutes over high heat. Correct seasoning and mix in cream and parsley. Cook sauce 2 minutes over medium heat. Pour over fish and serve.
Serving suggestion: Serve on a bed of seasoned rice with parsley and pour sauce over all.
