Ingredients

  • 2 1/2 c almond paste ( 1 pound, 9 oz)
  • 1 1/4 c sugar
  • 1/2 c powdered sugar
  • 1 tsp cinammon
  • 1 tbsp honey
  • 1 tsp vanilla
  • 5 egg whites
  • 5 c pine nuts

Preparation

Step 1

Put almond past, sugar, powdered sugar, cinammon, honey and vanilla in bowl and beat low-medium speed until mixutre is smooth, 1 minute
Add egg whites in 3 installments and beat until absorbed, 30 sec to 1 min per addition
Put dough in pastry bag # 6 plain tip and pipe dough out into circles
Spread pine nuts on cookie sheet invert dough cookies on top until all cookies coated with pine nuts
Leave prepared cookies out, uncovered at room temp overnight to dry
Bake cookies at 350F
Bake until golden, 20min
Remove from oven and transfer parchment to heatproof surface to cool
