Ingredients

  • 1 1/4 cups flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 stick butter, room temp
  • 1 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup milk
  • 3/4 cup freshly brewed espresso
  • 1 tbsp instant espresso powder

Preparation

Step 1

Preheat oven to 325. Line muffin tins with paper liners. Whisk together flour, baking soda, salt, and cocoa. With a mixer, cream butter until fluffy, add sugar and eggs, beat well. Add vanilla, beat to combine.
Add flour mix in three batches, alternating with milk. Mix well. Mix together brewed espresso and espresso powder, add to batter and beat until smooth.
Fill cups 3/4 full. Bake 15-18 minutes.
Top with mocha, vanilla, or chocolate frosting.
