Ingredients

  • 1 egg white
  • 1 tbs. sugar
  • 1 cup almonds, slivered and toasted
  • 1 cup boiling water
  • 1 pkg. (4 serving size) Jello-brand flavour gelatine
  • Ice cubes
  • ½ cup cold water
  • 1 pkg. cream cheese, softened
  • ¼ cup milk
  • 1/ tsp. almond extract
  • 1 cup thawed cool whip

Step 1

Preheat oven to 350 degrees. Line an 9 inch square baking pan. Beat egg white and sugar until well blended. Add almonds and stir gently to coat. Spread mixture into prepared pan and bake 10 – 12 minutes until light brown. Set aside.

Stir boiling water into gelatine, beat until well dissolved. Add enough ice cubes to measure 1 cup. Add gelatine, stirring until the ice is completely melted. Chill until slightly thickened, mixture is consistency of egg whites (approximately 30 minutes).

Combine cheese, milk, and extract until well blended. Slowly add gelatin, beating until well blended. Gently stir in whipped topping, spread over almond crust and chill until firm.
