Ingredients
- 2 tbs. olive oil
- 1 large onion, minced
- 2 cloves garlic, minced
- 1 lb. ground beef
- Salt and pepper
- 1 cup diced peeled potatoes
- 1 tomato, cored and chopped
- 1/4 cup green olives, coarsely chopped
- 3 cups flour
- 1 1/2 tsp. baking powder
- Salt
- 10 tbs. butter, cut into small pieces
- 1/2 cup shortening, cut into small pieces
- 11-13 tbs. ice water
- 1 egg, lightly beaten
- 1 tbs. milk

Preparation
Step 1
Process flour and baking powder in a food processor, add shortening and butter until it resembles coarse crumbs. Add the water and shape dough into a dis and wrap in plastic, chill 1 hour.
Heat oil and add onion, garlic, and ground beef until browned. Add the remaining ingredients, cooing until the potatoes are tender, about 10 minutes.
Roll dough into 1/8 inch thickness and cut out 6 inch rounds; sppon 1/4 cup of the filling onto 1 side of each round. Moisten edges with water and fold in half. Press edges together to enclose the filling and sead with a fork.
Combine egg/milk and brush the empanadas and bake until godlen, about 15 minutes and let cool.
