  • 4 squares (1 oz. each) semisweet chocolate

  • 3 separated eggs

  • 1 tsp vanilla

  • ¾ tsp cream of tartar

  • ½ cup sugar

  • 1cup chilled whipping cream


Heat chocolate in heavy saucepan over the heat until melted. Remove from heat. Beat egg yolks lightly. Stir yolks and vanilla into melted chocolate. Beat egg whites and cream of tartar in 2 1/2 qt. bowl until foamy. Beat in sugar 1 tbls. at a time. Continue beating until stiff and glassy. Stir 1/4 of meringue into chocolate mixture. Fold into the remaining meringue. Beat whipping cream in chilled 1 ½ qt bowl until stiff. Fold into chocolate mixture. Refrigerate at least 2 hours.
