Ingredients

  • 4 Chicken breast filets
  • 1 egg
  • Flour or breadcrumbs
  • 2 Tbsp. Olive oil
  • 1 jar Trader Joe’s Mango Sauce
  • 1 med. Onion finely sliced
  • 1 Tbsp. wine or cider vinegar
  • 1 cup Chicken Stock
  • 1 tsp. minced ginger
  • 1 tsp. minced garlic
  • 1 tsp. Dijon mustard
  • Black Pepper

Preparation

Step 1

1. Cut each chicken breast into 3 pieces and dip in egg and flour/breadcrumbs.
2. Fry in 1 Tbsp. olive oil until browned, about 4 minutes each. Remove to shallow baking dish.
3. In the same pan used to cook chicken, cook the onion in 1 Tbsp. olive oil until soft, about 5 minutes.
4. Put all other ingredients into the pan, stir and reduce to syrupy consistency.
5. Pour over chicken, season with black pepper and place in the oven at 325 degrees for 45 minutes.

*original recipe: pork and 1 large can of apricots (roughly chopped)
*sprinkle with chopped green onions
