Ingredients

  • 2 Tbsp margarine
  • 1 Tbsp olive oil
  • 1/4 cup diced red pepper
  • 1 Tbsp chopped fresh parsley or 1 tsp dried parsley
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 3 cloves minced garlic
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • 2 Tbsp fresh squeezed lemon juice
  • 4 boneless, skinless chicken breasts, cut into strips
  • 3 cups cooked angel hair pasta

Step 1

In a large skillet, heat margarine and olive oil over medium-high heat until margarine melts. Add red pepper, parsley, basil, oregano, garlic, salt, black pepper, wine, chicken broth, and lemon juice and mix together. Add the chicken strips and saute for approximately 3 min. Lower heat and cook for an additional 10 to 15 minutes, allowing sauce to reduce slightly and chicken to cook through. Add cooked pasta to skillet, coating pasta with the sauce, and serve.
