Ingredients

  • 1/3 bag Mission Yellow Round Tortilla Chips
  • 24 pieces SeaPak Popcorn Shrimp, oven crispy
  • 1 teaspoon vegetable oil
  • 1 cup small chopped yellow onion
  • 1/2 cup small chopped green bell pepper
  • 2 cups Nature Swet cherry tomatoes, 12 ounce pack quartered
  • 1/2 cup tap water
  • 1/2 teaspoon Tabasco brand pepper sauce
  • 1 teaspoon salt-free cajun seasoning
  • TT kosher salt
  • TT black pepper
  • 1 cup shredded mozzarella

Preparation

Step 1

Pre-heat oven to 450 degrees. Prepare shrimp according to package directions, reserve hot.

In a skillet over medium-high heat, add vegetable oil and saute onion and peppers for 3 minutes or until soft.

Add tomatoes, water, Tabasco, cajun seasoning, salt and pepper. Simmer for 5 minutes or until most of the liquid has evaporated. Reserve hot.

Place tortilla chips on an oven proof platter. Top evenly with reserved onion-tomato mixture.

Top with mozzarella and reserved shrimp. Bake 5 to 7 minutes or until cheese is melted.

HINTS:

For additional cajun flavor, add a pinch of Gumbo File powder and a bay leaf to the onion-tomato mixture.

The onion-tomato mixture can be made a day ahead and heated in a microwave before topping the tortilla chips.

Serve nachos with a bottle of Tabasco for people who want a little spice.
