Parmesan Risotto

Ingredients
- 4 T Butter
- 1 med onion, diced
- 1 bay leaf
- 2 cups Arborio rice
- 16 oz. white wine
- 8 cups chicken stock, hot
- 4 T fresh basil, finely sliced
- 1/2 cup grated parmesan

Preparation
Step 1
Melt butter on med heat. add onions and bay leaf and sweat for 5 min. Add rice and saute 3 min. Add wine.
Continue to cook, stirring constantly until wine is nearly absorbed. When pan starts to look dry, start adding stock, 1/4 cup at a time, until rice is al dente. Add basil and cheese, stir to combine. Serve immediately
