Ingredients
- 3 Tbsp. fresh lime juice
- 2 Tbsp. extra virgin olive oil
- 1 tea. seeded, deveined and minced jalapeno
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels removed from 1 ear of corn
- 1/2 cup cored, seeded, and diced tomato
- 1 green onion, trimmed and thinly sliced
- 1/2 med. avocado, peeled, pitted and diced (about 1/2 cup)
- 3 Tbsp. chopped fresh cilantro

Preparation
Step 1
Whisk lime juice, oil, and jalapeno in a large bowl until blended.
Add the beans, corn, tomatoes, green onions, avocados and cilantro. Gently toss until blended.
