Ingredients

  • 1 small Red Onion
  • 4-6 Roma Tomatoes - chopped coarsely
  • 2 ripe, but firm Avocados - diced
  • 1 can (15oz) whole kernel Corn - drained
  • 1 can (15oz) Black Beans - drained
  • 1/3 cup Olive Oil
  • 1/3 cup white vinegar
  • 3 Tbsp Water, as needed
  • 1 packet Italian dressing mix
  • Garlic powder or fresh minced garlic to taste

Step 1

In large bowl, combine diced red onion, tomatoes, avocado, corn and black beans; mix well. Stir in olive oil, vinegar, water, Italian dressing mix and garlic. Chill until ready to serve. Serve with tortilla chips.
