Ingredients
- 1 (1pd.) pork tenderloin
- 1 tab. butter or margarine
- 1 tab. vegetable oil
- 1 clove garlic, minced
- 1/2 cup dry red wine
- 1/2 cup marsala wine
- 1 tab. tomato paste
- 1/2 pd. fresh mushroom cap
- 1 tab. fresh chopped parsley
- Hot cooked noodles or rice

Step 1
Cut tenderloin into 4 equal pieces. Place each piece between two waxpapers; flatten to 1/4 inch thickness, using a meat mallet or rolling pin.
Heat butter and oil in a large, heavy skillet over med. heat. Add pork, and cook 3 to 4 minutes on each side or until brown. Remove pork from skillet an keep warm. Saute garlic in pan drippings in skillet; add wines and tomato paste, stirring until blended. Add mushroom caps and simmer 3 to 5 minutes. Return pork to skillet; heat thoroughly. Serve over noodles or rice; sprinkle with parsley over pork.
