Ingredients

  • 2 cups sifted flour
  • 1/2 tsp salt
  • 1 cup butter (no substitutions)
  • 1/2 cup superfine sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • jam or other filling
  • *You can also use 2 tsp of vanilla extract in place of the almond extract.

Preparation

Step 1

1. Sift flour and salt together into bowl.

2. Cream butter and sugar together.

3. Add extract to butter mixture.

4. Add flour mixture to butter mixture 1/2 cup at a time until blended.

5. Chill dough up to 2 hrs.

6. Roll dough into 1 inch balls and place 2 inch apart onto ungreased cookie sheet. Make indentation with thumb. Add 1/2 tsp of jam/filling of choice.

7. Bake at 325F for 15 min. or until color of pale sand.

8. Let cool and remove from cookie sheet.
