Ingredients
- Ma Po Pork

- 14 14 ounce package firm tofu, drained and cut into ½ inch cubes
- Sauce
- ½ cup chicken broth
- 2 T dry sherry
- 2 T soy sauce
- 2 tsp black bean sauce (a little high carby, but a little goes a long way in this dish)
- 1 tsp sesame oil
- ½ tsp Chinese Chili Sauce
- ½ tsp Splenda
- ¼ tsp salt
- ¼ tsp black pepper
- 1 T peanut oil
- 4 tsp minced garlic
- 4 scallions, white and green parts, minced
- 1 T minced fresh ginger
- ½ pound ground pork or pork loin, diced
- ¼ cup cilantro for garnish (optional)
- to to 10 tofu to combine. Reduce heat to medium low and cook, stirring occasionally, 10 minutes, uncovered. When done, it should have the consistency of a moist stew, not soup. Serve in bowls and garnish with cilantro if desired
