Ingredients

  • 15 ounces riccota cheese
  • 2 large eggs
  • 10 ounces frozen chopped spinach thawed and dnuned
  • 1 cup shredded mozzaroHa cheese
  • 1/2 cup grated Parmesan cheese
  • 11/2 tablespoons sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 manicotti shells uncooked
  • 32 ounces marinara sauce

Preparation

Step 1

Stir together ricotta cheese and eggs until blended. Stir in spinach, mozzarella cheese, 1/4 c Parmesan, and next 3 ingredients. Stuff into manicotti shells.

Spread 1/2 cup marina sauce in bottom of a lightly greased 11X7 inch baking dish. Arrange stuffed shefe h a single layer over sauce Pour remaining
sauce over shells, covering shells completely, cover.
chill 6 hours, remaining
Bake, covered, at 400 degrees for 40 minutes. Sprinkle evenly with remaining 1/4 cup Parmesan cheese, bake 15 minutes more.
