Spam Musubi

This is a recipe that my husband makes and it reminds him of the Spam Musubi that he used to eat in Hawaii when he was younger.

Ingredients
- 7 oz. can Spam, sliced into 7 pieces lengthwise
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp Mirin Sweet Cooking Rice Wince
- 3 cups sticky rice
- Nori (seaweed)

Step 1
Fry the spam slices in a large skillet. Add the soy sauce, sugar, and Mirin to the skillet and cook the spam slices in the mixture until the liquid is reduced and has thickened; Set aside. Prepare 3 cups of sticky rice in a rice pot. Wet the Nori and cut the Nori sheets into 2 - 3 pieces. Place the Nori onto wax paper. Place a sushi mold onto the center of the Nori. Fill 3/4 of the mold with cooked rice. Firmly press the rice down with the sushi mold's cover. Push the molded rice out by *gently* lifting the sushi mold off. Place the prepared spam onto the rice and add a little sauce from the skillet. Fold the Nori over the rice and wrap the spam musubi with the wax paper. Allow the spam musubi to sit for 10 minutes. Serve the spam musubi warm.
