Ingredients
- 1 3 1/2 lb well-trimmed, tied fillet of beef
- Salt and Pepper to taste
- 1 tablespoon vegetable oil
- 4 tablespoons unsalted butter
- 2 tablespoons finely chopped shallots

Preparation
Step 1
Preheat oven to 450 degrees
Sprinkle beef on all sides with salt and pepper, and rub with oil
Place the beef in a shallow roasting pan and bake for 20 min., turning once or twice as it roasts
Pour off fat from pan, retaining juices and add the butter and shallots
Continue baking 3-5 min.
Remove roast from the oven and untie
Cover with foil and let stand in warm place (10 min)
Serve sliced with juices.
