Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1/2 cup wheat germ
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup neutral tasting oil
  • 1/2 cup packed dark brown sugar
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups old fashioned rolled oats (not quick cooking)
  • 1 cup raisins

Preparation

Step 1

1. Preheat oven to 325. Whisk to combine both flours, wheat germ, baking powder, baking soda, cinnamon, and salt in a bowl. In a separate bowl, whisk together oil, brown sugar, honey, eggs, and vanilla. Add flour mixture and stir to combine; mix in oats and raisins.

2. Scoop 2 tablespoons of dough and roll into a ball, repeat with remaining dough. Place on parchment lined baking sheets, spacing 2 inches apart.

3. Bake, rotating sheets halfway through, until golden brown 10 to 13 minutes. let cool on sheets 5 minutes, then transfer cookies to a wire rack to cool completely. Cookies can be stored in an airtight container at room temperature up to 1 week.

** can substitute raisins for chopped nuts, dried fruits, seeds, unsweetened shredded coconut, and or coarsely chopped dark chocolate.
