SALMON BROILED WITH TARRAGON BUTTER

Ingredients
- 3 tbs butter
- 1 1/2 tbs fresh lemon juice
- Fresh ground pepper
- 2 (1-inch thick) salmon fillets
- 1 1/2 tbs minced fresh tarragon or 1 tsp dried, crumbled.

Preparation
Step 1
1. Preheat broiler.
2. Melt butter with lemon juice in small saucepan over low heat.
3. Removed from heat and add generous amount of pepper.
4. Arrange salmon skin side down on broilerproof pan, brush with half of the butter mixture. Season with salt.
5. Broil without turning until just cooked through.
6. Transfer to plates.
7. Add tarragon to remaining butter and spoon over salmon and serve.
