Ingredients

  • 12 oysters on the half shell
  • 4 tbsp. panko
  • 2 - 4 tbsp. finely grated parmigiano reggiano
  • 1 tsp. EVOO
  • 1 ounce finely diced pancetta or chopped bacon
  • 1 small shallot, minced
  • 2 tbsp. minced fennel
  • 1 tbsp. parsley
  • 1/2 cup fresh spinach, finely chopped
  • 1 tbsp. zambucca or cognac
  • 1 - 2 tbsp. whipping cream - 35% or creme fraiche
  • pinch each cayenne and freshly grated nutmeg
  • salt and freshly cracked black pepper to taste

Preparation

Step 1

* *Sauté* pancetta (or bacon if pancetta not available) with vegetables in olive oil until tender.

* *Add* sambucca and let boil off. *Remove* from heat and *stir* in spinach, cream, cheese, panko and spices.

* *Stuff* oysters and *bake* in 450 oven for about 15 or 20 minutes or until hot and browned on top.

N.B. December 24, 2009. I didn't take the oysters out of the freezer until about two hours before dinner so they were still quite cold to the touch when they went in the oven. That resulted in the best batch yet, I think.
