  • For the Chocolate cookies
  • 1 chocolate cake mix
  • 1/3 cup water
  • 3 Tablespoons applesauce
  • 2 eggs
  • For the Marshmallow Butter Cream
  • 1/2 cup butter, softened
  • 1/2 cup marshmallow cream
  • 1 teaspoon vanilla
  • pinch of salt
  • 2 1/2 cups powdered sugar
  • 3 Tablespoons whipping cream

Step 1

Combine the cake mix, water, applesauce, and eggs in a mixing bowl. Beat on low for 1 minute, and beat on medium for 2 minutes. Drop by teaspoon on to a baking sheet. Bake at 350* for 10 minutes. Remove to a wax paper lined counter and cool completely.
Beat the butter, marshmallow cream, salt, and vanilla until creamy. Slowly add the powdered sugar and whipping cream until creamy. Spread on half of the cookies and top with the rest of cookies. Store in a loosely sealed container for 3-4 days. Makes 12 whoopie pies.

Notes

Do not store these cookies in a tightly sealed container. They will become extremely soft and sticky.
