These extra-rich, fudgy bars make the perfect brownie bite. You won't need more than a smidgen to satisfy even your biggest chocolate cravings. You'll also get a double dose of satisfaction from the peanuts and peanut butter in both the brownie and the frosting. Starting with a boxed brownie mix and canned frosting makes these treats easy to prepare. The kids will want to gobble them up; but save some for the adults. They'll be perfect with an after-dinner cup of coffee.

  • 1 18- to 21-ounce package fudge brownie mix
  • 1/2 cup chopped peanuts (optional)
  • 1 3-ounce package cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 2 tablespoons milk
  • 1 egg yolk
  • 1 16-ounce can chocolate frosting
  • 1/2 cup creamy peanut butter
  • Chopped peanuts (optional)

Step 1

1. Preheat oven to 350 degree F. Lightly grease a 13x9x2-inch baking pan; set aside. Prepare brownie batter according to package directions. If desired, stir in the 1/2 cup peanuts. Spread batter in prepared pan. In a medium mixing bowl, beat together cream cheese, 1/2 cup peanut butter, the milk, and egg yolk until smooth. Spoon mixture into a decorating bag fitted with a small round tip (or spoon it into a resealable plastic bag and snip off one corner of the bag). Pipe mixture over brownie batter in pan.
2. Bake in preheated oven for 30 minutes. Cool in pan on a wire rack for 1 hour.
3. In a medium mixing bowl, stir together the frosting and remaining 1/2 cup peanut butter. Spread over cooled brownies; if desired, sprinkle with additional peanuts. Cut into small squares. Makes 64 bites.
4. To Store: Cover bars and store in the refrigerator for up to 3 days or freeze for up to 3 months.
