Ingredients
- 1 1/2 cups sliced fennel bulb (1 small)
- 1 1/2 cups cubed peeled butternut squash
- 1 1/4 cups cubed red potato
- 1 cup cubed peeled turnip
- 1 cup slices parsnip
- 1 tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp chopped fresh thyme
- 1/4 tsp pepper
- 6 garlic cloves, peeled
- 3 large shallots-halved
- 1 tbsp honey
- 1 1/2 tsp cider vinegar

Step 1
Preheat oven to 450, Combine 1st 11 ing in lg bowl, toss well. Arrange in single layer on cookie sheet coated with cooking spray. Bake 25 min or until browned. Place veg mix in lg bowl, add honey and vinegar, toss well.
