I made these for a recent party using leftover smoked turkey, and they were a huge success. Everyone loved them!

Ingredients

  • 1 (7-oz) jar roasted red bell peppers
  • 2 cups chopped cooked chicken (or turkey)
  • 1 (8-oz) package cream cheese, softened
  • 1 (0.4-oz) envelope Ranch buttermilk dressing mix
  • 1 small can chopped ripe olives
  • 1/2 small onion, diced
  • 1 (4.5-oz) can chopped green chiles, drained
  • 2 tablespoons chopped fresh cilantro
  • 8 (6-inch) flour tortillas

Preparation

Step 1

Drain roasted peppers well, pressing between layers of paper towels; chop.

Stir together roasted pepper, chicken, and next 7 ingredients. Cover and chill at least 2 hours.
Spoon evenly over tortillas, and roll up. Cut each roll into fourths, securing with toothpicks, if needed. Chill until serving.
