Ingredients

  • 1/2 c milk
  • 1/2 c warm water
  • 1 tsp sugar
  • 1 tsp dry yeast
  • 2 Tbsp salad oil
  • 1 tsp salt
  • 2 1/2 c unsifted lour

Preparation

Step 1

Scald the milk and let cool until lukewarm
Combine warm water,sugar and dry yeast in a small mixing bowl
Let stand 10 min to dissolve
Add oil,milk and salt
Slowly beat i n 1 1/2c flour
Scrape and remove the beaters
Add the remaining flour and stir with a wooden spoon and then with hands
(You could use the dough hook on your mixer if you have one)
Knead the dough on a floured board for 1-2 min or until smooth
Dough should be soft
Roll out dough to 1/4" thick and cut into 3" circles
Place the circles on a cornmeal sprinkled pan and brush the tops with water
Sprinkle tops with cornmeal and let rise until light and puffy (approximately 1 1/2 hr)
Cook on a medium/hot ungreased griddle or electric frying pan for about 6 min per side
Makes 1 dozen muffins
