- 10 large eggs
- pinch cayenne pepper
- 3 oz ham, chopped
- 6 oz muenster cheese, grated
- 4 tbsp olive oil
- 3 bunches scallions, chopped
- salt and pepper

Preparation
Step 1
Preheat the broiler ont he oven. Whisk eggs, 2 tbsp water and cayenne in a large bowl. Fold in ham and half of cheese.
Heat 1 tbsp olive oil in an ovenproof 6 to 8 inch nonstick skillet over medium. Add scallions, pinch salt and pepper, cook until soft, 4-5 minutes. Reduce heat, pour in egg mix and stir gently to distribute the fillings. Cook until bottom is just set, 4 minutes. Sprinkle rest of cheese on top, transfer to oven and bake until puffed and golden, 10 minutes. Let stand for a minute before serving.
