This is the recipe that my mom was famous for! She got it from my Uncle Billy's first wife, Akiko.
packages green onions, chopped
(If you mostly use the whites, you will need 10 pkgs...if you use the greens, you can use 6 pkgs or more)
Carrots, at least 1 lb., grated
Bell peppers, diced
lb. hot sausage
lbs. regular sausage
cups cooked rice
Cook rice and set aside. Cook sausage and drain. Add onions and peppers and stir-fry. Add carrots and cook until softened. Stir in rice and simmer to meld flavors. Can be cooked ahead and reheated.
