Ingredients

  • 3

    TBSP olive oil

  • 1

    elephant clove of garlic, minced (double if regular)

  • 1

    lb. sweet Italian sausage; casings removed

  • 1

    medium onion, chopped

  • 2

    lbs. Roma tomatoes, diced

  • 1

    6oz. can tomato paste

  • ½

    cup dry red wine

  • 1

    tsp. sugar

  • 3

    TBSP oregano, minced

Directions

1. Heat olive oil in a large saucepan over medium heat. 2. Add garlic and stir 1 minute. 3. Add sausage; break up sausage with a spoon and cook until lightly browned. 4. Add onions and tomatoes and cook 4 minutes. 5. Mix in wine, tomato paste and sugar. 6. Reduce heat and simmer for about 20 minutes stirring frequently. 7. Stir in fresh oregano and remove from heat.
