Ingredients

  • PRIME RIB SEASONING:
  • We just used Paula Deen's House Seasoning
  • SAUCE;
  • 2 cups sour cream
  • 1 cup mayonnaise
  • 1/2 cup Horseradish ( Don't like horseradish, would leave out)
  • 1 tsp. lemon juice
  • Salt and white pepper
  • Combine all ingredients well and let sit for at least a few hours before serving. Keep cold.

Step 1

Preheat oven to 375 degrees. Rub or sprinkle Paula Deen's seasoning all over roast generously on all sides.

Place in the wire rack in the roasting pan with the FATTY SIDE facing UP. Place in middle rack of oven and cook at 375 for 1 hour. Turn oven down to 275 degrees and roast for 1 more hour or until a thermometer inserted to the middle of the cut reads 130- 140 for medium to medium well. Hold at 120 ( the lowest our oven will go is 170) for service. The secret to good prime rib is leaving it for a long time at 120 degrees for at least 3 hours. This produces a more tender, flavorful product.


2010:

We had a 4-5 lb. roast, boneless. It was great, we didn't cook it at 275 that long. I think we turned it down to 170 to cook alittle slower. It got to 130 during the first hour, I think.
