Ingredients

  • 1 package (16oz) pound cake mix
  • 3/4 cup canned pumpkin
  • 6 tablespoons water
  • 2 eggs
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • TOPPING
  • 1/2 cup packed brown sugar
  • 1/4 cup all purpose flour
  • 3 tablespoons melted butter

Step 1

Spray a 9 inch round cake pan with nonstick spray.

In a large bowl, combine the cake mix, pumpkin, water, eggs, pumpkin pie spice, and baking soda. Beat on low speed for 30 seconds. Scrape down the side of the bowl and beat on medium for 2 minutes. Pour half of the cake batter into the prepared pan.


In a small bowl, combine the topping ingredients. Sprinkle half over the batter. Pour remaining batter over the crumbs and spread carefully. Sprinkle with remaining topping.


Bake at 350 for about 40 minutes, or until a toothpick inserted in the center comes out clean.
