Preparation
Step 1
These aren't traditional-looking golden brown choc. chip cookies, but they are fantastic, (my wife makes them all the time).
***NOTE: DO NOT USE A STAND MIXER, YOU WILL BREAK IT (we did), use your arm muscles, and yes they will be tired...but its worth it.
1. Heat oven to 350º. Like cookie sheet with aluminum foil or cooking parchment paper; if using foil, grease with shortening.
2. Beat cream cheese and margarine in a large bowl w/ electric mixer on medium speed about 2 min. until fluffy. Add sugars, vanilla, almond extract, eggs, and ice-cream topping. beat about 3 minutes until fluffy.
3. Mix flour, cocoa, baking soda, and salt. Stir into margarine mixture until evenly mixed. Stir in remaining ingredients.
4. Drop dough by heaping teaspoonfuls about two inches apart onto cookie sheet.
5. Bake 13-15 minutes or until edges are set (center will be very soft). Cool 5 minutes; remove from cookie sheet. Cool on wire rack
