- 1 1/2 - 2 tbsp. Basic Red Wine Vinaigrette
- OR:
- 1 tbsp. EVOO
- 1/2 tbsp. red wine vinegar
- 1/2 tbsp. lemon juice
- 1/2 tsp. dried oregano
- 1 clove garlic, minced or grated
- 1/4 tsp. honey
- Salt and freshly ground black pepper
- Salad Ingredients:
- 3 cups romaine hearts, shredded thickly
- 2 - 3 tbsp. minced red onion
- 6 cherry tomatoes
- 1 baby cucumber, cut into chunks
- 4 pepperoncini peppers
- 6 calamata olives
- 45 grams light Feta, diced

Step 1
* *Combine* all dressing ingredients except salt and pepper; mix well. *Season* to taste with salt and pepper if desired; let stand 5 minutes.
* *Combine* all salad ingredients in large bowl; toss with dressing. *Add* chopped or crumbled feta cheese, if desired.
