  • 1 1/2 - 2 tbsp. Basic Red Wine Vinaigrette
  • OR:
  • 1 tbsp. EVOO
  • 1/2 tbsp. red wine vinegar
  • 1/2 tbsp. lemon juice
  • 1/2 tsp. dried oregano
  • 1 clove garlic, minced or grated
  • 1/4 tsp. honey
  • Salt and freshly ground black pepper
  • Salad Ingredients:
  • 3 cups romaine hearts, shredded thickly
  • 2 - 3 tbsp. minced red onion
  • 6 cherry tomatoes
  • 1 baby cucumber, cut into chunks
  • 4 pepperoncini peppers
  • 6 calamata olives
  • 45 grams light Feta, diced

* *Combine* all dressing ingredients except salt and pepper; mix well. *Season* to taste with salt and pepper if desired; let stand 5 minutes.
