Ingredients

  • butter 1/2 cups unsalted, and softened
  • brown sugar 1/2 cup light
  • sugar 1/2 cup
  • egg 1 large
  • vanilla extract 1 teaspoon
  • peanut butter 3/4 cup creamy
  • flour 2 cups
  • baking soda 1/2 teaspoon
  • salt 1/4 teaspoon
  • parchment paper

Preparation

Step 1

Preheat oven to 350°
Line 2 cookie sheets with parchment, set aside

In a bowl of your electric mixer, add butter and sugar, cream until light and fluffy, about 2-3 minutes
Add peanut butter, mix together
Add egg and vanilla, mix to combine

In a separate bowl whisk together the flour, baking soda, and salt
Add to peanut butter mixture and beat until incorporated

Cover the dough with plastic wrap and refrigerate for about 1 hour

Roll into 1 inch balls, and place on cookie sheet lined with parchment paper
Using a fork lightly flatten balls using a criss-cross pattern
Place the cookie sheet in the refrigerator for about 10 minutes to firm up cookies

Place cookie sheet on oven on center rack
Bake cookies for about 12-14 minutes, or until the cookies are lightly browned around the edged
Immediately upon removing the cookies from the oven, sprinkle the tops of the cookies with a little sugar
Cool on a wire rack

Yields about 56 cookies
