  • 2 tablespoons vegetable oil
  • 1 cup chicken broth or bouillon
  • 1 garlic clove, crushed
  • 1/2 teaspoon salt
  • 1 tomato, peeled, seeded, chopped
  • 1/2 teaspoon crushed dried red pepper
  • 1/4 cup chunk style peanut butter
  • 1 lb boneless, skinless chicken breasts

Step 1

In a small skillet heat oil and garlic Stir in tomato peanut butter, broth or bouillon salt and pepper. Simmer about 10 minutes stirring occasionally set aside to cool.

Cut chicken breasts into 3/4 to 1-inch pieces. Thread 3 or 4 pieces on each of twelve to sixteen 4 inch bamboo skewers. Arrange in a 12 x 7 baking pan. Pour peanut butter marinade skewered chicken cover and refrigerate 5 to 6 hours Preheat broiler if necessary. Place shelf 3 to 4 inches from heating element Broil in oven or on barbecue grill until browned I with marinade turn and broil other side until browned and tender. Serve hot Makes 12 appetizer servings
