Ingredients
- Topping:
- 4 seeded plum tomatoes
- 2 c low sodium tomato juice
- 1 chopped red bell pepper
- 3/4 cup chopped cucumbe
- 1/2 cup chopped sweet onion
- 1/4 cup fresh basil
- 2 Tbsp lime juice
- 1/2 chopped jalapeno pepper
- 1 clove garlic
- 1/2 tsp salt
- 1 chopped plum tomato
- 1 chopped avacado
- 1/4 c chopped cucumber
- 2 Tbsp chopped sweet onion
- 2 Tbsp chopped basil leaves
- 2 tsp lime juice
- 1/8 tsp salt

Step 1
Blend in food processor. Mix toppping ingredients. Chill both mixtures for 1-2 hours. Divide among 4 bowls and top with avacado mixture.
