Ingredients
- 5 slices bacon
- 1 cup ½ and ½ cream
- ½ cup butter
- 2 cups milk
- 2 small onions diced
- 2 tsp. salt
- ½ cup all-purpose flour
- 1 tsp. pepper
- 3 cups chicken broth
- 1 cup sour cream
- 4 med. potatoes, baked, still firm, peeled, diced
- 1 ½ cups grated cheddar cheese
- 4 scallions, thinly sliced

Preparation
Step 1
Baked potatoes ~ 40 minutes then peel
1. Melt butter in a heavy pot. Add onions and sauté until soft (5-8 minutes)
2. In small bowl, combine flour and enough chicken broth to yield a paste.
3. Stir paste and remaining broth into onions and cook until thickened.
4. Stir in potatoes, cream, milk, salt, and pepper. Heat to serving temperature, do not boil.
5. Ladle into bowls, garnish with sour cream, cheese, scallions, and extra bacon.
*a little grated nutmeg or dillweed enhances potato flavor.
*NEVER heat above medium.
