This was a recipe Terry Davis gave to me. It is really good. Only thing now is that you may want to use organic eggs.

Ingredients

  • 1 cup butter or margarine
  • 2 cups sifted powdedred sugar
  • 4 oz. unsweetened chocolate, melted
  • 4 eggs
  • 3/4 tsp peppermint
  • 2 tsp vanilla
  • 1 cup vanilla wafer cumbs or graham cracker
  • whipped cream
  • maraschino cherries (optional)

Preparation

Step 1

Beat butter and powderd sugar together until light and fluffy. Add melted chocolate and continue beating thoroughly. Add eggs, one at a time beating well after each addition. Beat in peppermint and vanilla.

Using 1/2 cup crumbs, sprinkle the crumbs in each of 18 cupcake pan liners. Spoon in heaping tablespoon of chocolate mix. Top with remaining crumbs.

Freeze until firm. Top with whipped cream and cherry.
