Preparation

Step 1

In a skillet over medium heat, brown ground beef, onion and garlic; drain fat. Mix in spaghetti sauce.

Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes, or until al dente; drain.
Lay noodles flat on towels, and blot dry.

In a medium bowl, mix together eggs, cottage cheese, Parmesan cheese, parsley and 1 teaspoon salt.

Preheat oven to 350 degrees.

Layer 4 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 cottage cheese mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce.
Repeat.
Top with remaining 4 noodles and sauce. Sprinkle additional Parmesan cheese over the top, if desired.

Cover the pan with aluminum foil (sprayed with Pam to prevent sticking).

(Refrigerate overnight if desired). The trick is to refrigerate the casserole overnight allowing the flavors to meld and give it exceptional flavor.

Bake 80 minutes. Remove foil and bake another 20+ minutes until the lasagna is golden brown. (If you decide to chill the lasagna overnight, increase the baking time by about 15 minutes).

Cool 10 minutes and serve.
