Ingredients

  • Shrimp, sautéed with garlic, ginger & lime
  • Shredded carrots
  • Shredded cabbage
  • Chopped basil leaves
  • Chopped cilantro leaves
  • Grated cucumber
  • Rice stick noodles
  • Rice sheets

Preparation

Step 1

1. Place rice noodles in a large pot of boiling water, stir. Cook until al dente. Drain and rinse noodles.
2. Sautee shrimp with garlic, ginger & lime. Set aside to cool. Cut into small pieces.
3. In a large bowl, combine noodles, shrimp, carrots, cabbage, basil, cilantro, and cucumber.
4. TO PREPARE RICE PAPER WRAPPERS: Fill a large pan or bowl with hot tap water. Dip 1 rice paper wrapper into water, lift out, and drain briefly. Set on a flat surface.
5. TO ASSEMBLE THE SALAD ROLLS: Place ½ cup filling in the center of each wrapper. Pressing down on the filling, fold the bottom of each wrapper over the filling, then fold in the sides; roll tightly. Press edges to seal.
6. Serve with sweet chili sauce.
