Ingredients

  • 2 cups flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3/4 cup cold butter
  • 1 egg yolk, save whites to brush on top
  • 1 tablespoon lemon juice
  • 1/4 cup cold evaporated milk

Preparation

Step 1

Mix dry ingredients together.
 
Add butter, mixing with pastry blender until well blended.

Beat together with fork the egg yolk, milk and lemon juice.

Stir into dry ingredients.

Form into ball and refrigerate for at least 1 hour.

Roll out between two sheets of lightly floured wax paper.

This makes one double crust or two pie shells.

If making a double crust pie, use the egg white to brush on the top.
