Ingredients

  • 1 tbsp EVOO
  • 1 clove garlic, minced
  • 1/2 onion, chopped
  • 1/2 tsp chipotle chili powder
  • 1/4 tsp salt
  • 1/3 cup water
  • 15oz can black beans
  • 15oz can kidney beans
  • 3 tbsp salsa (good quality)
  • 10 tortillas

Preparation

Step 1

Heat EVOO in a skillet over medium-high heat. Add the onion and cook until tender. Add the garlic and cook 1 minute longer. Stir in chili powder and salt. Add the water and beans (with juice) and bring to a boil. Reduce heat and simmer for 10 minutes. Remove from heat, stir in salsa and mash the beans.

Serve the bean mixture inside tortillas topped with shredded cheese, tomatoes, lettuce and sour cream.
