Ingredients
- 1/4 cup onion
- 2 tsp olive oil
- 1 (10 ounce) package broccoli, chopped, cooked
- 1 (10 ounce) package cauliflower florets, cooked
- 2 cups rice, cooked
- 1 (10 3/4 ounce) can cream of celery soup, low fat
- 1/2 cup milk, 1% or nonfat
- 1 cup Cheddar cheese, lowfat, sharp, shredded
- 2 tsp pepper
- 1/4 tsp cayenne pepper
- 2 tbsp Parmesan cheese, lowfat

Step 1
Saute onion in olive oil. Combine all ingredients except Parmesan cheese and place in a casserole dish sprayed with nonstick coating. Sprinkle with Parmesan cheese, cover and bake at 350 F for 30 minutes.
